Cherry-Infused Brandy Zabaglione

A unique twist on the classic Italian dessert. Traditionally made with Marsala wine, I swapped in cherry-infused brandy for a rich, fruity depth inspired by an authentic Italian recipe.

Zabaglione differs from eggnog in its texture and preparation. While eggnog is a creamy drink made with milk or cream, Zabaglione is a light, airy custard made by whisking egg yolks, sugar, and wine (or brandy!) over heat. If you’re looking for something different than eggnog this holiday season, give this elegant treat a try - Serve it warm or chilled with chocolate and lady fingers for a decadent holiday treat!

Ingredients:

  • 4 egg yolks

  • 1 Tbsp white sugar (using less sugar here since the cherry-infused brandy is already very sweet)

  • 1/2 cup cherry-infused brandy (I used rainier cherries)

  • Optional: Chocolate and lady fingers

Instructions:

Cocktail

  1. Whisk the egg yolks and sugar in a heatproof bowl until the mixture is pale and fluffy. Gradually stir in the cherry-infused brandy.

  2. Place the bowl over a pan of gently simmering water and cook on low heat, stirring constantly, until the mixture thickens and begins to rise.

  3. Remove from heat, garnish with chocolate and a lady finger. Serve warm or chilled in glasses.

Garnish (optional)

  1. Garnish it with grated chocolate and lady fingers!
