Note: If you’re using persimmons from the mezcal infusion, keep in mind they’ll have a stronger mezcal flavor, which adds an extra kick to your cocktail! However, fresh persimmon pieces work just as well if you prefer a more subtle flavor. Either way, your Persimmon Mezcal Sour will be a treat!

Ingredients:

  • 1 egg White

  • 2 oz persimmon-infused mezcal (can be the pieces from the infusion or freshly cut pieces)

  • 3/4 oz lemon juice

  • 1/4-1/2 oz brown sugar syrup

Instructions:

  1. Put the egg white into the shaker.

  2. Then in a separate container, blend the persimmon-infused mezcal with the persimmon pieces.

  3. Strain through the shaker that has the egg white.

  4. Then put the lemon juice and brown sugar syrup into the shaker.

  5. Shake. Then put in an ice cube and shake again.

  6. Pour into a cocktail glass with a strainer.
