Iichiko Silhouette Shochu
If you haven’t tried Iichiko shochu, I highly recommend giving it a try.
I know sake is known more than shochu outside of Japan but they are not same. Shochu is distilled liquor while sake is a brewed alcohol. They have different alcohol contents with Shochu having higher alcohol content than sake. While Shochu can be made from not only rice, but also some other raw materials such as sweet potatoes, barley, buckwheat, corn, rye, brown sugar, chestnuts, etc, sake is made solely from rice.
Also, in case you are wondering about the differences between shochu and vodka, shochu is generally distilled mostly only once in a pot still while vodka undergoes multiple rounds of distillation in a column still. Both can have differences when it comes to filtration.
What makes Iichiko shochu also interesting is it doesn’t contain any sweeteners or additives, yet it has that sweet umami flavor. The use of koji also plays a part in that umami flavor.
